This cocktail is perfect for summer and a breeze to make. Wiith its fresh fruity fragrance and hint of mint, it's just right for a warm evening.

You'll need 1.5L (6 cups) of watermelon juice. You'll need to soak 12 bamboo skewers in cold water for 20 minutes.
Ingredients
1/2 medium seedless watermelon, rind removed, cut into 1cm pieces
6 cups ice cubes, coarsely crushed
310ml (about 1 1/4 cups) gin
Fresh mint leaves, to serve
Method
Thread 3 watermelon pieces onto a small bamboo skewer. Repeat to make 12 skewers. Place the remaining watermelon in the bowl of a food processor and process until smooth.
Strain the watermelon puree through a fine sieve into a large jug. Cover and place in the fridge for 1 hour to chill.
Place the watermelon juice, ice and gin in the bowl a food processor and process until smooth. Pour among serving glasses. Top with mint and decorate with skewers to serve.
Time plan
Prepare this recipe to the end of step 2 up to 1 day ahead. Cover the skewers and store in fridge. Continue from step 3 just before serving.
Allow 1 hour chilling time.
